Amrita's Fruitcake



Fruitcake
------------


Ingredients
Dry fruit- 1 cup (8 oz. or 250 gms.),
Dry Nuts, chopped- 1 cup (8 oz. or 250 gms.)
Rum- 1/2 cup- optional
Flour- 1 1/4 cup (300 gms.) + 2 tablespoons
Sugar- 1 1/4 cup (300 gms)
Butter- 300 gms.
Eggs- 3
Baking Powder- 1 teaspoon
Vanilla Essence- 1 teaspoon
Clove, Cardamom, Cinnamon powders- one pinch each


Method
If using rum soak the dry fruits in the rum for as long as possible- or 1-2 weeks.
Bring all the ingredients to room temperature.
Drain the soaked fruits and toss in the 2 tablespoons of flour. keep aside.
Preheat oven to 350F. Line a baking pan with parchment paper and grease it- or grease and flour the baking pan.
Cream the butter, by beating it well, and slowly add the sugar (mix till the consistency is like cream and the sugar is well mixed).
Add the eggs, one by one and mix well.
In a separate bowl, mix the flour, baking powder, nuts and fruit. Add the cloves, cardamom and cinnamon powders.
Now combine the cake mixtures, pour ino the baking pan and bake for 40 mins. Or until a toothpick inserted into the cake- comes out clean.
You can add a little rum at interval of one or two days.
It is said that the more the rum, the better the taste!

Gokul Pithe
------------


Upakaran-

Purer jonye (stuff)
1&1/2 cup korano narkel,
1& ¼ cup chini
1 &1/4 cup powder milk (khoya hole aro bhalo),
1 tsp chhoto elacher guro.

Batter r jonye-
1 cup moyda,
1 cup milk (dudh e ektu powder milk mishiye ghano kore niyo),
1 tbsp ghi,
1/3 tsp soda-bi-carb.

Raser jonye-
Raser jonye 2&1/2 cup chini,
2 cup jal.

Bhajar jonye beshi kore tel & 1tbsp ghi.

Prastuti-
Prathome ekti pan e narkel o chini mishiye medium heat e pak dao. Milk powder meshao. Narhate thako. Jakhan dekhbe pan r ga theke alga hoye aschhe takhan elacher powder mishiye namiye nao. Ektu thanda hole oi makha theke khanikta kore niye gol gol chyapa akarer gore rakho. Erpar batter r jonye moyda te soda o melted ghi mishiye nao. , aste aste dudh ta dhalo. Gola ta ektu ghano hobe. Besi ghano mone hole ektu dudh ba jal dite paro. Abar patla mone hole ektu moyda. Na patla na khub ghano. Dhaka diye 15 min rekhe dao.
Erpar chini o jol diye ras ta toiri karo. Ektu chyatalo hobe.
Erpar deep pan e tel o ghi ta garam karo. Gol-chyapta narkel r pithegulo batter e dubiye garam tel e chharo. Dupith bhalo kore bheje tule nao. Heat ta kintu high te rekho na, pure jabe. Bhaja ses hole garam rase dao ogulo. Khanikta rekhe ras theke tule nao. Erpar garam garam tatka gokul pithe paribeshan karo.

1&1/2 cup dudh.

Samanyo tel .

Patisapta toiri kore seta raseo dite paro abar dudh ghano kore kheer kore oi kheerer modhye patisaptagulo dite paro.

Pranalee-
Prathome pan garam kore narkel chini mishiye paak dite thako medium heat e, erpar milk powder meshao. Paak ta pan theke alga hoye ele bujhbe pur ta hoye gechhe, ote elacher guro diye namiye nao. Thanda hole puli-r akare gore rakho.
Erpar gola ta toiri karo. Eta hobe pancake r golar moton. Patla na hoy. 15-20 min rekhe dao. Eibar ekti frying pan (chatalo) e 1 tsp tel makhiye garam karo. Erpar oi gola theke ekti hata (kana uchu) ba cup e kore gola dhalo.jeman pancake r gola dao. Ekta pith hote dao. Jodi bojho to pas theke samanyo tel r drop dite paro. Tolata samanyo badami hoya chai. Ekbar ulte opar diktao 15-20 sec rakho. Erpar abar ulte pancake r ekdhar theke lomba kore gora pur ta diye roll kore nao. Just 2 bar moton roll hobe. Halka rong dhora dikta niche thakbe. Erpar dupith taoya ba pan e samanyo bheje aste aste plate e rakho. Dekhbe much ta atke gechhe. Eibhabe sabkati kore phelo.
Erpar chinir ras korte paro pantuyar ras r moton ( 3 cup chini 3&1/2 cup jal) or 1 ltr dudh ke ghano kore half ltr kore nao. Pariman moton chini diye ghano karo. Elacher guro dao. Patisaptar opare kheer ta dhele poribeshon koro .

ADITI 'r Toiri kora LEMON CHEESECAKE



Lemon Cheesecake

Ingredients

For the biscuit base- 1 cup digestive biscuits or Graham crackers, crushed
1/3 cup butter, melted
For the filling
½ cup (100 grams) cream
juice of 1½ lemons
1 teaspoon lemon rind, grated
1 cup cream cheese
½ cup powdered sugar
½ teaspoon lemon essence
For the lemon sauce
3 tablespoons sugar
1 teaspoon cornflour
¾ tablespoon lemon juice
½ teaspoon lemon rind, grated
2 drops lemon essence
a drop of lemon yellow colour (optional)
½ teaspoon butter
For Garnishing: cut slices of Kiwi, Peaches, Mango and Lemon Rind


Method

For the biscuit base.Mix the biscuit crumbs with the melted butter and press the mixture
into the base of a 175 mm. (7") loose bottomed pie dish, Chill until firm.
For the filling.Whisk the cream in a clean dry bowl till soft peaks form. Keep aside. Mix the
lemon rind, lemon juice, cream cheese, sugar and lemon essence till it is smooth. Fold in
the whipped cream gently so that it does not curdle or split.
How to proceed.
Spread the filling over the set biscuit base and chill until firm.For the
lemon sauce. Combine the sugar with ½ cup of water in a saucepan and heat till the
sugar is dissolved. Dissolve the cornflour in 2 tablespoons of water and add it to the sugar syrup.

Heat stirring continuously till the mixture thickens and gets a coating consistency. Add the butter and mix well. Cool and add the lemon juice, lemon rind, lemon essence and lemon yellow colour. Mix well and keep aside. Cool completely while stirring continuously. For the garnish. Unmould the cheese cake and place on a serving plate. Pour the lemon sauce on top and refrigerate again. Serve chilled.

Garnish with Kiwis, Mango, Peaches slices.

SOHINI 'r banano Caramel Raisin Bread Pudding



Caramel Raisin Bread Pudding

Ingredients (Serves 4)
1/3 cup raisins
1 tablespoon unsalted butter (tbsp)
2-3 teaspoons vanilla custard powder (tsp)
1 1/2 cups 1 percent milk
2 large eggs
5 tablespoons granulated sugar
2-3 drops of vanilla essence
4 cup 1/2-inch cubed bread

Cooking Steps:
Caramelize sugar by heating 2 tbsp. sugar with a little butter until a nice brown colour and a nutty smell is released.
Preheat oven to 350°. In a large bowl, whisk milk, eggs, remaining 3 tbsp. granulated sugar, and custard powder , 2 -3 drops of vanilla essence and caramelized sugar until blended. In a baking dish , spread a little butter. Spread the bread cubes in the bottom. Pour the blended mixture on the top.

Bake until mixture is slightly set. Add rasins . Bake further until puffed and golden, 30 to 35 minutes. Let cool; serve warm or at room temperature with honey or maple sauce.

INGREDIENTS/UPOKORON :

Refined flour / Moida - 115 gm./ 1/2 Cup
Cocoa powder- 35 gm / 2 1/2 Tablespoons
Walnut/ Akhrod (broken into pieces/ bhanga) - 70 - 80 gm/ 1/3 Cup
Margarine or butter/ makhan -150 gm/ 2/3 Cup
Eggs / Dim - 3
Granulated sugar/ chini - 220 grm/1 Cup
Vanilla essence - 5-6 drops
Water/ Jol- 60 ml./ 1/4 Cups


METHOD/PRONALI

-Grease and prepare a 2 1/2 lb. tin.
-Sift together the flour and Cocoa powder.
-Melt the margarine/ butter.
-In a large bowl beat the sugar, eggs and vanilla essence very well until the sugar is dissolved
and the mixture is smooth. Then fold in the flour and cocoa power mixture , then the melted
butter and the water. Beat till fluffy.
-Then mix in the nuts, pour into the greased tin and bake at 350F or Gas Mark 4 for 35- 40 min.
-A clean toothpick inserted in the center should come out clean.
If needed allow to bake for an extra 5 min.

Ekti 1 kg maper cake tin grease kore rakho.

Ekti boro basone chini, dim ar vanilla essence diye fetate hobe. Chini jokhon ekebare mishe jabe ar
misron ta bes smooth hoye jabe tokhon moida ar cocoa powder er mix ta ebong melt kora margarine
ba butter ta diye 60 ml jol diye abar bhalo kore fatiye nite hobe.Tobe halka hathe korbe. Tarpor walnut
er tukro gulo mishiye grease kora cake tin te misron ta dhele dao.

Temperature: 180 dgr c Time : 35- 40 min

Churi ba tooth pick diye ekbar check kore nebe. Proyojon hole aro 5 min rakhte paro.
